Ingredients

  • 8 oz cucumber

  • 1/2 lemon

  • 4 fresh mint leaves (plus some more for decoration)

  • 3 ice cubes

Directions

  • Roughly dice the cucumber and add to blender
  • Add ice cubes
  • Add mint leaves
  • Squeeze the lemon juice over
  • Blend until smooth
  • Serve immediately!

Notes

  • Decorate with some extra mint leaves if you like.
  • If I am using an organic cucumber, I would leave the skin on. However, if it is not organic, I will usually peel the cucumber first.
